Each year, we take full advantage of the holiday season and prepare our Holiday Pairing Feast, an elaborate six-course meal complete with recipes and Ridge pairings. The second course of this year’s Holiday Feast is a jerk spiced ham with persimmon chutney. This dish is perfect for the holidays. It’s rich with classic holiday ham flavor but bold with spice. The persimmon chutney is seasonal and ideal for the winter months.
The wine we selected to pair with our second course is the 2014 Buchignani Ranch Carignane. A staple with our ATP members, the Carignane is one of our more versatile wines for pairing with food. Stan Buchignani’s ranch is located on Dutcher Creek Road, in the hills on the far western edge of the Alexander Valley appellation. Stan’s grandfather, Dominico Cerruti, first planted a five-acre block in 1927; his father, Dino, added seven acres in the 1940s and planted the last in the early 1950s. The vineyard’s climate bears a strong resemblance to that of upper Dry Creek Valley three miles to the south, where days are quite warm. Fog, which tends to hang low in the valley, burns off sooner in the hills. Carignane from Buchignani is complex, its fine structure much like that of a field-blend zinfandel. This 2014 is no exception, as the wine is currently showing aromas of black cherry, cocoa, tobacco and a hint of mint in the nose. Here is what Winemaker John Olney has to say about this wine:
